So it’s Friday and the last thing on my mind and/or the last thing I’m looking forward to tonight is cooking dinner.  I don’t know why but I am almost always stumped on what to make and I’m almost always scrambling to whip something together that is fast and healthy.

Thank goodness I discovered this amazing website several months ago and I’m hooked!  A former midwesterner turned family friendly cook in L.A., Catherine McCord, has been my saving grace for family recipes.  I love her take on cooking and healthy meals that include a lot of flavor the entire family can enjoy.  I only have time to make one meal and I want my son to eat what we eat…the only downside is that since I’ve been using her recipes he will only eat things that have FLAVOR – ha!

I’ve made the following successful recipes for my family and they have been Yeager approved!

Middle Eastern Chicken Burgers – Easy and YUMMY! http://weelicious.com/2012/03/05/middle-eastern-chicken-burgers-spice-it-up/

Breakfast Quesadilla – I use spinach tortilla’s to add a little more flavor and color.  I even add thawed frozen spinach sometimes as well! http://weelicious.com/2010/09/13/breakfast-quesadilla/

Turkey Pesto Meatballs – Simple and I served them with my favorite Organic Tomato Vodka Sauce from Trader Joes. http://weelicious.com/2010/06/01/turkey-pesto-meatballs/

You can save your favorite recipes to your ‘Recipe Box’ for easy access anytime.  Also, for new moms she has really great puree recipes for babies (I wish I found this site when Holden was starting solids!).

Check it out and let me know what recipes you try and your family approves of!  She also has a cookbook coming out in a few days that you can pick up on amazon.com http://weelicious.com/2012/06/20/im-giving-birth-to-my-third/

Have a great weekend!
